Its affinage lasts 7 days, no hurries, to eliminate totally all the whey obtaining its delicate taste. A product really ‘unique’, deserving a leading role on all the courses, both sweet and savory: great for the preparation of appetizers, Cheesecake or Savory Pies, it can be appreciated even on Pasta, Risottos, paired with Meats or Seafoods: from shrimps to salmon. More than 40 years have gone by from the day Urbano Castellan decided to start to produce it, alongside the elaboration of Asiago and Caciotta. The reminder is continuous of the challenges to maintain high quality in such a perishable product more than all in the summertime. The Diary farm in the years ahead has modernized but the recipe of the ‘Stracchino’ by Castellan Urbano has always been the same: made from first quality milk collected by a few local selected and certified stables (zero Kilometers), respect for the slow ‘affinage’, the cutting and packaging still carried out manually.
